Ingredients:
- 1 onion, chopped.
- 1 green pepper, chopped.
- 1 red pepper, chopped (optional).
- 1 cup of cooked rice (from the day before).
- 1 pound of shrimp, peeled and deveined.
- 1/2 cup of corn (optional).
- 1 egg, beaten.
- 2 tablespoons of oil.
- 1 tablespoon of Cajun Boil spice.
- 2 tablespoons of soy sauce.
- 1 tablespoon of sugar.
Instructions:
- In a saucepan, heat up the oil on medium-high heat.
- Add the shrimp and cook until they turn pink, about 2-3 minutes.
- Add the chopped onion and corn (if using) and sauté until the onion is translucent.
